Frugal Countdown to Christmas... Day 20...Candy Cane cupcakes

If you are a peppermint fan at all, you have to try these!!! Seriously this peppermint butercream icing is amazing!!! My boy has a Christmas party at Preschool tomorrow and I signed up to bring cupcakes. I gave him a chance to pick out a design and after he chose something complicated that I didn't have any of the ingredients for, he decided to go for candy cane cupcakes. I just made a basic vanilla cupcake recipe with some Christmas sprinkles in it. You can use any vanilla cupcake recipe or even a packet mix. But what makes these cupcakes amazing is the peppermint buttercream icing...(Yes it's mint flavoured again!...sorry but its so delicious!!!). There is something so refreshing about a minty flavour. And hopefully the kidlets will at least like the crushed candy canes, especially after my boy isn't getting the reindeer cupcakes that he originally wanted.

So here is the recipe.....

Cupcakes

* 1 1/4 cups plain flour
* 1 1/4 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 3/4 cup sugar
* 1 1/2 tsp vanilla extract
* 1/2 cup canola oil
* 1/2 cup milk
* 2 eggs

1. Set oven to 190 degrees Celsius.
2. Mix flour, baking powder & baking soda & salt and mix till well combined.
3. Place eggs, milk, canola oil, vanilla extract & sugar in the flour bowl and then mix till well combined.
4. Scoop mix into patty cake liners till they are half full and place in oven for approx 13 mins.
5. Place on cooling rack until cooled.






Icing
(Recipe adapted from Noshing with the Nolands)
* 1 cup butter, softened
* 3 cups icing sugar
* 4 Tbsp Thickened cream
* 2 tsp peppermint extract

* 4 candy canes,  crushed for topping

1. Cream butter in a large bowl. 
2. Pour all other ingredients into bowl and mix until light & fluffy. 
3. Place into an icing bag with the nozzle of your choice, and decorate however you wish.
4. Decorate the tops with the crushed candy canes.

And once again a delicious, easy & frugal Christmas treat. My favourite type!
