Countdown to Christmas...Day 23...Christmas Sprinkle Cookies

At Christmas time I love everything to be Christmas themed. I’m one of those crazy Christmas obsessed people! These cookies are really basic but with Christmas sprinkles, they become completely Christmassy. As much as I love all the fancy Christmas goodies, I love for my kiddies to have some Christmas treats that they will enjoy too. So here is the recipe for Christmas sprinkle cookies....


INGREDIENTS

115g butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
2 Tbls milk
1 1/2 tsp vanilla extract
1 3/4 cups plain flour
2 tsp cornflour
1 tsp baking soda
1/4 tsp salt
3/4 cup Christmas sprinkles plus additional sprinkles for the tops of the cookies

DIRECTIONS: 

1. In a large bowl, mix  the butter, white sugar & brown sugar together until well combined.
2. Add the egg, vanilla and beat until well combined.
3. Add in the milk, and beat again until combined.
4. Next add the flour, cornflour, baking soda & salt and beat on low speed until just combined.
5. Add in the sprinkles, and beat on low speed until just combined.
6. Scoop cookie dough out (about the size of a large tablespoon) and roll into balls. It is a little sticky but I still found rolling them the easiest way to get a good shape. With this size you should get about 28 cookies.
7. Place them on a tray covered in baking paper, a few cm apart. Note that they will spread out. Cover & place them in the fridge to chill for 3 hours.
8. Turn on oven & set to 190 degrees Celsius.
9. After they are chilled, flatten them out & sprinkle with additional sprinkles.
 10 . Place in oven for 8 minutes and once removed from the oven, transfer to a cooling rack.
